Fiano from The Deanery Vineyard (Balhannah) in the Onkaparinga Valley. The 2026 vintage was extremely late and cool, allowing the fruit to develop full, rich aromatics, high acid offsetting Fiano’s natural waxy texture.
The fruit was destemmed and split into thirds, held on skins for zero, three or six hours before gently basket pressing. The juice was settled overnight, before racking to small format stainless steel for a wild ferment. Full malolactic fermentation further enhanced the wines texture before bottling in late winter.
