The 2025 Piccadilly Valley Chardonnay is from the Swaby Vineyard in the township of Piccadilly. The season was warm, dry and early, leading to powerful, aromatic fruit of fuller weight. The fruit was whole bunch pressed and settled overnight without additions, before barrelling down with solids to 20% new oak for a wild fermentation. No sulfur was added until malo naturally completed in the late spring. This allowed bottling without the need for fining or filtration after 9 months maturation. Diam Closure.
