2025 Onkaparinga Valley Fiano

Sourced from the Deanery Vineyard in Balhannah. Always the last fruit picked for J&S Fielke, the Fiano was handpicked on the 13th of March, 2025. After chilling, the fruit was spilt into two parcels, the first destemmed for 3 hours skin contact, the other 6 hours. After gentle basket pressing, the juice was settled overnight and run to old barrique barrels for a wild fermentation.

After 4 months in oak, the wine was transferred to tank, unsulfured, with all it’s lees for a further 2 months of reductive maturation. The wine was then racked, sulfured, coarse filtered to cellar bright and bottled without fining.
