Sourced from the Deanery Vineyard in Balhannah and farmed using Organic methodology. The 2023 season was a very cool, prolonged growing cycle, ideal for sparkling wine with rich fruit flavour development. The wine was whole bunch press, and settled overnight before barrelling down to barrel (50% second fill), for a wild fermentation. After completing malo in the Spring, the wine was tirage, unfiltered, in December 2023. After 18 months on lees, the wine was disgorged with 2g/L dosage, and the first sulfur addition of the wine’s life.
